Easiest Dinner Ever
On those busy nights where I have a lot to do- this is a simple meal that has barely any prep & can be left alone while cooking!
The ingredients/quantities listed below are for 2 people.
2 sausages- I like Longos hot Italian, sliced into smaller pieces
2 potatoes, cut into bite sized pieces
1 red pepper, cut into smaller bite sized pieces
1 zucchini, sliced
1 tbsp of drizzled olive oil
1 knob of butter for flavor
fresh cracked black pepper to taste
* you could also add garlic, herbs, chili flakes, lemon or whatever other flavored you like. you can also change up the veggies like adding onion, eggplant, carrots, use sweet potato instead, etc
Wrap in foil- I usually wrap twice because of the weight. Place in the oven at 425 degrees and cool for 30 mins on each side. Or BBQ on med high for 30 mins on each side.
Use caution when opening the foil as this will be extremely hot!
